Butter Malting.: SKIftMttNO OF MIILK. Skimming of milk shoiuld e done carefully after it has stood twelve hourn, care being taken that what is skimmed off consists of cream. unmixed with milk. A second skim mi:g may be mnule twilve hours afterwards, Iut the cram should niot be mixed with the first creamn tihken off until about six to nine hours before churiling. Itn col weather the cream can remain bn the' milk fir twenty four hours but should be never over that time. On this. point -a gfeat many buttcrmak ers fail.
