Farming Rotes. Purifying Rancid Butter. — The ten dency of butter to become rancid is well known. This is due to liberation of the volatile fatty acids. The process (accor- 1 ding to the ' Hospital ') which lias been i brought iuto practice for the complete separation of these substances is as fol lows : — The butter is melted down witli a certain quantity of butter milk and stirred until a fins emulsion is obtained Hot air is then drawn through the melted liquid, by which means a churn ing is set up ; and while the volatile acids are carried oif the solid impurities sink to the bottom and are removed. Then a current of cold air is made to take the place of tho hot, and -under its influence tlie butter begins to separate in granules as in the ordinary method of churning. I3ining Matters* GREAT EASTERN CO. As will be remembered, before tho Chinese trouble commenced, this company started operations oh a fairly largo scale a few miles from Canowindra, intending to erect battery and nil macliiuery to thoroughly tost and prove tho ground they were working. Ordors wore issued^ however, to suspend all hands possible unon tho Eastern war breakinsr out. and the mine has been under the charge of Mr. C. Lang during the intervening months. Wo have seen some stone from the Bhaft which shows gold freely. The one shaft oti tho property is down about 50 feet, timbered tho whole distance. The reef -is from 18 inches to 2 foot and shows gold freely. About 16 tons are at grass, Evorything remains at a stand still, awaiting ordors from headquarters.
