GRIUYERE PATTIES. Required: Three quarters of' a sound of short or puff pastry, ioz cooked macaroni, .loz Gruyere cheese, loz butter, ;oz flour, 11 gill milk, tablespoonful cooked tongue, tea spoonful French mustard, 1 raw yolk of egg, salt and pepper, a little Par mesan cheese. Roll out the pastry thin and stamp out rounds a little larger than the patty-tins to be used, allowing two rounds for each. Line each tin with a round of pastry. Melt the butter in a stewpnu, stir in the flour smoothly, add the milk, and stir this over the fire till it boils. Now add the Gruyere and tongue, cut in to smanll'dice, and the nmcaroni in short-lengths. Mix these well' to. gether, and season with mustard, halt, and pepper. Put a pile of this mixture into each patty-tn., moisten the ,?dges,;and corer with the second round of pastry.
