The following extract is from a recent Eng lish work: The various kinds of cheeses which divide the trablic favor owe their char acter to differences in the manipulation of the card, the character of the pasture, . - . . . . - and other less evident peculiarities in, their manufacture. In Ayrshire the ' milk is heated to 85 or 90 degrees Fah., j when the rennet is added, and the con-, settinc of the curd. Cheddar cheese is made by first adding rennet. The curd is afterward finely broken and actively stirred in the vhpv. which is heated bv drawinc off a portion, placing it in a vessel in boiling wster, and returning it to tue remainuer. This is done twice : the first time heat ing the whole mass np to 80 degrees Fe.hr iinil the second time UD to 100 degrees Fahr. Half a pound per cent, of salt is added to the crumbled curd. The farms, composed of m brickdust sort of soil, are cultivated from fence to fence, everv rood, as the farms of Flemings and of Brittany are culti vated from hedge to hedge. Cattle stand with their four feet in two feet of clover. Every field is a park. Every i..n . ..niinra. Frent nicr-non is' a porcine paradise. Pennsylvania is Iire-eminentlv the State of barns. Think of a three-story stone barn, with a swell front and dormer windows iu the roof, and a luxurious portico where the Sybaritic calves chew the cud of sweet contentment on summer evenings ! And then behold the little cabin in the rear where the agricultural Dutchman lives with his ,frow," and where the children lie on the floor and envy the happy calves in the lattice portico. Every barn is three times as large as the bouse. which serves as a sort of appendage, and. as it were, clays second fiddle to it. The barn is headquart...

JYjrvierij tuv-a.1. A Xew Cattlk Beoiox. Montana, it is said, is likely to be a competitor with Texas in the tray of famishing cattle for the eastern markets, in the following iray: The Northern Tacifia will Boon reach the Missouri river at Bismarck, having connection with Lake Superior at Dn Jnth, a distance of 400 miles. A line of steamers is to be put on from Bis marck to Fort Benton, the head of navi fratinn smi miles, which is in the heart of Montana. This, tt first sight, may the route is not so fatiguing as it is from Texas, that is to Caicago, for cattle are dnyen on foot from bOO to 1,000 to Abilene, and thence to Chicago it is more than 700 miles.
